From what I understand and have tested out myself, the shiny side cooks better and faster than the dull side.  Because the dull side absorbs the heat while the shiny side reflects the heat.

So, if you accidentally wrap something with the shiny side out before you bake, remember to bake longer than what the recipe recommended and check when it smells &quot;done&quot;.</description>
